Pumpkin Soup Recipe with Cardamom and Curry

Ingredients

  • 1 kg pumpkin
  • 1 carrot
  • 1 onion
  • 1 or 2 garlic cloves
  • 1 chicken stock cube
  • 2 teaspoons curry powder
  • 2 cardamom seeds
  • 1 liter water
  • 2 tablespoons cream to taste
  • Salt and pepper

Instructions

  • After washing it and removing the seeds, cut the pumpkin into pieces. There is no need to peel it.
  • Put the pumpkin pieces in a saucepan of water, with the carrot, onion and diced garlic. Add the broth, curry and crushed cardamom.
  • Leave to simmer at medium temperature for around twenty minutes.
  • Salt, pepper and mix everything.
  • Serve hot. You can also add a little crème fraîche according to your taste.
