Preheat your oven to 180°C.
Unroll the first puff pastry on your work surface.
Spread the filling (here the pesto) on this first puff pastry.Sprinkle a little parmesan or pecorino on the pesto and cover the second puff pastry. Cut the dough to draw a tree.Tear off the other pieces of pasta. Cut out the fir branches on each side of the tree trunk as well as a few stars using a cookie cutter.Twist each branch onto itself. Brown the top of your tree with a mixture of egg yolk and milk then sprinkle a few seeds on top for decoration.
Bake for about 30 minutes, until the dough is well risen and golden brown.
