Green lentil and vegetable curry

Ingredients

  • 250 g cooked green lentils (canned)
  • 2 shallots
  • 2 cloves garlic
  • 4 or 5 carrots
  • 2 centimeters fresh or powdered ginger
  • 2 teaspoons curry powder
  • 10 cl coconut milk
  • 2 handfuls of fresh baby spinach
  • 1 tablespoon olive oil
  • Salt and pepper
  • 1 spring onion

Instructions

  • Peel and finely slice the onion, chop the garlic and put it in a pan with the olive oil.
    Brown gently while stirring.
  • Peel the ginger, cut it into pieces and add it to the pan.
  • Wash, peel the carrots and cut them into small cubes. Place them in the pan with the curry powder and stir. Cook for 10 minutes covered.
  • Add the baby spinach, coconut milk and lentils. Salt, pepper and stir. Continue cooking for 10 minutes.
  • You can then serve with a little rice and finely chopped spring onions, or even fresh coriander.
