Orange and cinnamon King cake

Ingredients

  • 500 g puff pastry
  • 200 g almond powder
  • 2 eggs + 1 egg yolk for gilding with a little cream
  • 120 g sugar
  • 110 g soft butter
  • 1 organic orange for the zest
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon powdered ginger

Instructions

  • Preheat the oven to 180°C.
  • Place a puff pastry on a flat baking sheet.
  • In a bowl, mix the almond powder, sugar, 2 eggs + the white of the 3rd (keep the yellow for gilding) and the soft butter.
    Then add the orange zest, cinnamon powder and ginger. Mix well.
  • Place and spread the resulting frangipane on the pastry, leaving a border of about 2 centimeters. Place the bean on the frangipani.
  • Lightly moisten the edge of the puff pastry with a little water (using a kitchen brush or your fingers), cover with the second puff pastry, and stick the edges together. You can form patterns by gluing the edges together, like in the photo below.
  • Make designs on the top and brush with egg yolk diluted with a little water. Make a small hole in the dough in the center of the top.
  • Bake for 30 minutes, checking regularly for doneness.
