Goat Cheese and Walnut Muffins

Ingredients

  • 220 g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 beaten eggs
  • 80 g cooled melted butter
  • 20 cl milk
  • 120 g goat cheese
  • 80 g grated gruyere cheese
  • 100 g walnuts peeled and coarsely chopped

Instructions

  • Preheat your oven to 180°C.
  • Mix all the ingredients in a bowl, lifting the dough so that it airs out.
  • Divide the batter between greased muffin tins or paper baking sheets.
  • Bake at 180°C for 10 minutes, then move to 200°C for another 10 minutes.
  • Check for doneness by sticking the tip of a knife into a muffin. If the blade is clean, the muffin is done. If there is any batter left, extend the baking time by a few minutes.
  • Remove from oven, unmould and cool on a wire rack.
