Preheat your oven to 180°C.
Mix all the ingredients in a bowl, lifting the dough so that it airs out.
Divide the batter between greased muffin tins or paper baking sheets.
Bake at 180°C for 10 minutes, then move to 200°C for another 10 minutes.
Check for doneness by sticking the tip of a knife into a muffin. If the blade is clean, the muffin is done. If there is any batter left, extend the baking time by a few minutes.
Remove from oven, unmould and cool on a wire rack.
