Preheat your oven to 200°C.
Place your puff pastry on a baking sheet covered with parchment paper, prick the bottom. Put it in the oven and bake your pastry disc for 15 minutes, making sure that the pastry does not puff up.
Hull strawberries, cut half into small cubes and the rest into quarters. Place diced strawberries in a bowl, sprinkle with sugar and mix with balsamic vinegar. Pour over the pre-baked pie crust and bake for another 10 minutes.
Let the pie cool, then place your strawberry wedges on top, along with mint leaves, basil or chocolate chips.
