Orange Salad with Fennel, Olive and Onion

Ingredients

  • 4 organic oranges (you can use several varieties)
  • 2 small fennel bulbs
  • 1/2 red onion, finely chopped
  • few black olives
  • few crushed pistachios (optional)
  • Salt and pepper
  • 1 small drizzle of olive oil
  • Herbs or spices like zaatar (optional)

Instructions

  • Wash the fennel and cut it into very thin slices using a knife or mandolin.
    Arrange them in a dish.
  • Wash the oranges and remove the zest from one of them.
    Then peel all the oranges using a good knife and cut them into slices.
    Arrange the slices and zest on the fennel in the dish.
    Do not hesitate to collect any juice that may leak and pour it back into the dish.
  • Peel and finely slice the red onion and place it in the dish.
  • Add the olives and pistachios when serving.
    Season with a little salt, pepper, any herbs or spices and a small drizzle of olive oil.
  • Serve and enjoy all the flavors and freshness of this salad.
