I made this delicious Orange and Fennel Salad recipe a few weeks ago but I wanted to share it here with you to bring a little freshness to your plate.
I therefore offer you a recipe idea for a sweet and savory salad that I often like to make as a starter for a good weekend meal but which I also eat in a lunch box as a main course. I appreciate the balance of flavors between the freshness of the fennel, the deliciousness of the oranges and the added character of the black olives.
I really like this recipe because it is very simple to prepare, it is full of good things that are almost sufficient in themselves so no need to add sauce. Obviously, if you wish, it is entirely possible to add a drizzle of olive oil or a few drops of vinegar, but personally, I find that this is not essential.
I made this recipe as part of my food diet rebalancing.
Orange and Fennel Salad with Olive and Onion recipe
What ingredients do you need to make this delicious salted orange salad recipe?
- organic oranges (you can use several varieties)
- small fennel bulbs
- a small red onion, finely chopped
- a few black olives (from Nyons or Greek)
- a few crushed pistachios (optional)
- salt and pepper
- a small drizzle of olive oil
- If you feel like it, you can add fresh or dried herbs or spices of your choice, such as zaatar.

Orange Salad with Fennel, Olive and Onion
Ingredients
- 4 organic oranges (you can use several varieties)
- 2 small fennel bulbs
- 1/2 red onion, finely chopped
- few black olives
- few crushed pistachios (optional)
- Salt and pepper
- 1 small drizzle of olive oil
- Herbs or spices like zaatar (optional)
Instructions
- Wash the fennel and cut it into very thin slices using a knife or mandolin.Arrange them in a dish.
- Wash the oranges and remove the zest from one of them.Then peel all the oranges using a good knife and cut them into slices.Arrange the slices and zest on the fennel in the dish.Do not hesitate to collect any juice that may leak and pour it back into the dish.
- Peel and finely slice the red onion and place it in the dish.
- Add the olives and pistachios when serving.Season with a little salt, pepper, any herbs or spices and a small drizzle of olive oil.
- Serve and enjoy all the flavors and freshness of this salad.
