Braised Cabbage

Ingredients

  • 1 head of white or green cabbage
  • 3 tablespoons of oil
  • Salt and pepper

For the sauce

  • 1 garlic clove peeled and pressed
  • 1 tablespoon butter
  • 1 teaspoon soy sauce (optional)
  • 20 cl fresh cream
  • 100 g grated Parmesan or Pecorino cheese
  • Freshly ground pepper

To serve

  • Crispy onions (optional)
  • Grated or shaved Parmesan or pecorino cheese

Instructions

  • Rinse the cabbage, dry it and cut it into 8 wedges.

  • Using a pastry brush, brush the cut sides of the cabbage with oil and season with salt and pepper to taste.

For the sauce

  • While the cabbage is cooking, start by peeling the garlic and browning it for 1 to 2 minutes over low heat with the butter.

  • Pour in the soy sauce and cream, then stir.

  • Add 100g of grated Parmesan cheese, stir, and let it melt over low heat.
    Generously season with pepper and turn off the heat.

  • Serve plates with two cabbage wedges per person.
    Stir the sauce and serve over the cabbage on plates.
    You can serve with crispy fried onions if you like.
