Cucumber Raita Recipe | Indian Yogurt Dip

Ingredients

  • 1 seeded cucumber
  • 1 pot of Greek yogurt (around 120 g)
  • 1 shallot or onion very finely chopped
  • 1/2 degermed garlic clove
  • 2 tablespoons chopped cilantro or flat-leaf parsley
  • 2 tablespoons chopped mint
  • 1 pinch chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon cumin powder
  • Salt and pepper

Instructions

  • Peel and core the cucumber. Grate it finely or cut it into small pieces.
    Place it in a large bowl.
    Add salt and let drain for about 15 minutes.
  • Meanwhile, chop the shallot and herbs and press the garlic.
  • Reserve in a bowl.Empty the water from the container that contains the cucumber.
  • Add the Greek yogurt (or cottage cheese), chili, cumin and pepper.
    Incorporate the ingredients you prepared (herbs, shallot and garlic).
    Mix well and refrigerate until ready to serve.
  • In a pan, gently toast the spices and place them on top.
  • Here is a very fresh starter.
    Add salt, pepper and enjoy...
    You can also add some chopped herbs on top...
