Healthy Banana and Oat Pancakes

Ingredients

  • 100 g organic oat flakes
  • 2 large organic bananas
  • 1 fresh egg at room temperature
  • 1 pinch baking powder
  • Oil for cooking

To serve

  • Banana slices
  • Blueberries
  • Honey
  • Maple syrup
  • Cinnamon

Instructions

  • Pour the oat flakes into a blender and reduce them to a powder by mixing.
  • Add the bananas one by one cut into slices and mix.
  • Add the egg and yeast, then mix again until everything is well mixed.
  • Heat a little oil in a non-stick frying pan over medium heat.
    When the pan is hot, pour two large tablespoons of batter and cook for a few minutes on each side, until lightly browned. Use a thin spatula to handle them.
    Repeat the operation until all the batter is used up.
  • Serve hot or warm, with banana slices, maple syrup, pecans or blueberries.
