Healthy Mayonnaise with Hard-Boiled Eggs and no oil

Ingredients

  • 2 hard-boiled or soft-boiled eggs
  • 120 g Greek yogurt (or cottage cheese)
  • 1 tablespoon mustard
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon lemon juice or cider vinegar
  • Salt and black pepper

Instructions

  • Start by cooking the eggs.
    In a saucepan, bring the water to a boil, then gently lower the eggs into the water.
    Cook for 7 to 8 minutes.
    Remove the eggs and immediately plunge them into cold or ice water to stop the cooking process and make them easier to peel.
    Carefully crack the shell and peel them under cold running water.
  • Place the chopped hard-boiled eggs in a blender.
    Add the remaining ingredients.
    Blend until smooth.
  • Pour into a bowl or airtight container and keep refrigerated until ready to serve.
