Mix the flour with the salt and sugar.Add the diced butter. Rub it in well with your fingers.Gradually add the water until you get a soft dough.Cover with a cloth and let the dough rest for 30 minutes to 1 hour.
Form the dough into a log and divide it into 6 balls.Lightly flour your work surface and roll out each ball of dough thinly using a rolling pin.
Heat a dry (no fat) skillet over medium heat. When hot, place a tortilla on top.Cook for 2 to 3 minutes, until golden brown.
Turn the tortilla over and cook for another 1 or 2 minutes to brown the other side the same way.Be careful, it burns quickly.
Repeat with the remaining dough.Place it in a large dish covered with a clean, dry cloth.You can quickly reheat them before serving, in a pan or in the microwave.
Notes
Be careful not to leave the tortillas in the pan too long, or they will harden.
