Preheat your oven to 180°C/350°F.
Wash and dry the parsley and/or coriander. Chop them finely and set them aside in a bowl.
Peel and finely chop the onion. Sauté it for 5 minutes over medium heat with a drizzle of olive oil.
Add the ground beef, your choice of spices, and stir-fry over high heat for another 5 minutes. Season with salt and pepper.
Remove from heat, add the eggs one by one and mix well.
Add the parsley and cilantro and mix well.
Make the samosas as shown in the diagram below, placing a tablespoon of filling on each sheet of filo pastry and folding them.
Place them on a baking sheet lined with parchment paper. Brush them with oil.
Bake for 10 to 15 minutes.
