Cook Time:45 minutes
Total Time:1 hour
Course: Dessert, Goûter
Cuisine: French
Servings: 6 servings

Ingredients

  • 900 g plums (here some mirabelle plums)
  • 2 eggs
  • 10 cl single cream
  • 2 tablespoons almond powder
  • 2 tablespoons sugar
  • 1 tablespoon vanilla sugar

FOR THE BUTTERLESS PIE CRUST

  • 250 g flour
  • 7 cl oil
  • 7 cl water
  • 1 pinch pinch salt

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a bowl, combine the flour, oil, water, and a pinch of salt.
250 g flour, 7 cl water, 1 pinch pinch salt, 7 cl oil
  • Knead until you get a smooth ball of dough. Make sure to knead for as short a time as possible so that the dough doesn't harden too much and retains its crispness. If the dough is too sticky, add a little flour; if it's too dry, add a little oil and/or water.
  • Flatten it and place it in the tart pan. Poke small holes in the bottom of the tart with a fork.
  • Arrange the pitted plums at the bottom of the tart, rounded side up.
    900 g plums
  • In a bowl, pour the eggs and beat them. Add the sugar, cream, and almond powder, then mix.
    Pour over the plums.
2 eggs, 10 cl single cream, 2 tablespoons almond powder, 2 tablespoons sugar
  • Bake for 45 minutes.
As soon as they come out of the oven, sprinkle the plums with vanilla sugar. This will allow some of the sugar to caramelize while the rest remains crispy. A real treat!
    1 tablespoon vanilla sugar
