Cook the sausages without pricking them in simmering water for 15 minutes.
Peel and slice the onions, then chop the garlic cloves.In a sauté pan, heat a drizzle of oil and brown the onions for 5 minutes over low heat.Then add the garlic, ginger, turmeric and chilli and continue cooking for 5 minutes, still over low heat. Add the crushed tomatoes and the sliced sausages, salt and pepper then mix.
Then let it simmer for 20 minutes at a low boil without covering.At the end of cooking, you can add a tablespoon of peanut butter and mix well.
Serve with rice or baked polenta fries, it's a treat.Add finely chopped flat-leaf parsley or cilandro.
