Radish Tzatziki Recipe

Ingredients

  • 150 g pink radishes
  • 1 garlic clove
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped mint leaves
  • 100 g cottage cheese or Greek yogurt
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon lemon juice (plus zest, optional)
  • Salt and pepper

Instructions

  • Roughly blend the washed and dried radishes, then place them in a salad bowl with the crushed garlic.
  • Once blended, squeeze the radishes in a cloth to remove excess water and prevent the tzatziki from becoming too runny and to retain its creaminess.
  • Add the finely chopped herbs and lemon juice. Mix.
  • Pour in the cottage cheese, season with salt and pepper, and mix.
  • Add a small drizzle of olive oil if desired.
    Refrigerate until ready to serve.
  • You can garnish with a few radishes or fresh herbs.
  • Serve as an appetizer, spread with breadsticks, for example, or as a starter with toasted bread.
