Radish Tzatziki Recipe

I tried this Radish Tzatziki recipe a while ago and I loved it! I really liked the texture and the little spiciness of the radishes that go perfectly with the fromage blanc.
This recipe can be enjoyed as a starter on toast or with breadsticks but also as a starter with a nice slice of country bread.
What’s really nice about this recipe is that it’s quick and easy to prepare. It’s a real discovery and I feel like it’s a dish that I’ll make again and again. And what’s more, I love it: this tazatiki is light and healthy! 😉
Originally, tzatziki is made with cucumber and Greek yogurt but I found that the pink radish brought a nice freshness and I also like the little spiciness that it can sometimes have. If you wish, you can also use other radishes depending on the season and your tastes. You’ll see I used fromage blanc for a lighter version, but if you’re more of a fan, feel free to use Greek yogurt.
A little tip: don’t hesitate to squeeze the radishes in a cloth once blended to remove excess water and prevent your mixture from becoming too runny.

- a clove of garlic
- chopped chives
- chopped mint leaves
- cottage cheese or Greek yogurt
- olive oil
- lemon juice and zest, if desired

Radish Tzatziki Recipe
Ingredients
- 150 g pink radishes
- 1 garlic clove
- 1 tablespoon chopped chives
- 1 tablespoon chopped mint leaves
- 100 g cottage cheese or Greek yogurt
- 1 tablespoon olive oil (optional)

Instructions
- Roughly blend the washed and dried radishes, then place them in a salad bowl with the crushed garlic.
- Once blended, squeeze the radishes in a cloth to remove excess water and prevent the tzatziki from becoming too runny and to retain its creaminess.
- Add the finely chopped herbs and lemon juice. Mix.
- Pour in the cottage cheese, season with salt and pepper, and mix.
- Add a small drizzle of olive oil if desired.Refrigerate until ready to serve.
- You can garnish with a few radishes or fresh herbs.
- Serve as an appetizer, spread with breadsticks, for example, or as a starter with toasted bread.
