Braised Red Cabbage with Raisins, a comforting recipe that smells like winter!
It’s been a while since I made my recipe for cooked red cabbage, and I have to say that once again, the result was a real delight! This simmered dish, both tender and tasty, awakened my taste buds as always.
It all started with a red cabbage bought last week at the market, with the initial idea of making vegetarian spring rolls. But after using a small portion, I still had three-quarters of it left… Rather than letting it hang around in the fridge, I wanted to cook it differently, opting for a gentle and fragrant cooking.
In this recipe, I prefer a two-stage cooking: I start in a cast iron or ceramic casserole dish to really capture the flavors, then I continue cooking in the oven, which allows the cabbage to become deliciously tender while developing its aromas. But if you prefer, you can continue cooking on gas or induction, over medium heat, taking care to stir regularly to prevent it from sticking.

What ingredients do you need to make this recipe?
- finely chopped red cabbage
- butter
- brown sugar
- cider vinegar
- salt
- pale raisins
- a few sage leaves
- a sprig of thyme
- black pepper
In this recipe, I kept it simple, just added raisins for a little sweet and salty flavor, but if you wanted you could definitely add smoked bacon and even diced apple.

Braised Red Cabbage with Raisins
Ingredients
- 500 g finely chopped red cabbage
- 30 g butter
- 20 g brown sugar
- 5 cl cider vinegar
- 1/2 teaspoon salt
- 1 tablespoon blond raisins
- 1 or 2 sage leaves
- 1 sprig thyme
- Black pepper
- Water
Instructions
- Preheat your oven to 160°C/320°F.
- In an ovenproof casserole dish, mix the butter, sugar, vinegar, salt and 7 cl of water.
- Heat, covered, over medium heat until the butter is melted and the ingredients are well combined.
- Add the red cabbage, grapes and herbs and mix well to coat.
- Bring to the boil, cover the casserole dish and place in the oven.
- Let cook for 2 hours, stirring every 1/2 hour and adding a little water if necessary.
