What do you think about Brussels sprouts? Do you love them or hate them? Over the past few years, I feel like they’re becoming more and more popular and I couldn’t be happier! They’re one of my favorite fall-winter vegetables: they’re fresh, healthy and filling and pair well with all sorts of seasonings. But, I think the key to loving Brussels sprouts is to prepare them properly. Nobody wants overcooked, mushy sprouts with an unappetizing mushy texture anymore. Here, I’m going to offer you something different!
Parmesan Roasted Brussels Sprouts Recipe


The other day, while going to the market with my sister, I came across some pretty little Brussels sprouts. I love them, but since kids aren’t really fans of them, I often tend to avoid them. This time, however, I decided not to leave them out!
At the time, I didn’t yet know how I was going to cook them, but luckily, I always have my famous list of 300 recipes to try on hand. I was sure I would find a good idea there… And bingo! Two recipes using Brussels sprouts were noted down, including this one: roasted Brussels sprouts, a recipe inspired by my Crispy Carrot Fries. I jumped in without hesitation, and I must say that the result exceeded my expectations. Not only did we enjoy them, but, miracle of miracles, even the kids loved them! Needless to say, these little sprouts are no longer in danger of being put aside at my house.


What ingredients do you need to make this baked Brussels sprouts recipe?
- 500g Brussels sprouts
- 2 tbsp oil (hot if you like)
- lemon juice
- 1 garlic clove
- 30g grated parmesan or pecorino
- Salt and pepper

You can also imagine some variations, by adding spices like smoked paprika, or even use a little hot oil to spice it up.

How to cook Brussels sprouts?
This recipe is surprisingly simple. Just clean the cabbages well, blanch them for 5 minutes in boiling water to soften them, then coat them with a mixture of olive oil, garlic and parmesan. Then, put them in the oven for about twenty minutes until they are golden and crispy. And there you have it! A tasty accompaniment to serve very hot like roast meats or in sauce, but this recipe will also be perfect as an aperitif with a little homemade sauce.



Parmesan Roasted Brussels Sprouts Recipe
Ingredients
- 500 g Brussels sprouts
- 2 tablespoons oil (spicy if you like)
- 1 tablespoon lemon juice
- 1 pressed garlic clove
- 30 g grated parmesan or pecorino
- Salt and pepper
Instructions
- Start by washing and preparing the Brussels sprouts.Cut the base of the stem of each one and remove any damaged leaves.Soak them in water with a tablespoon of white vinegar to rinse them and remove impurities.
- Bring a large pot of water to the boil with a teaspoon of coarse salt.Boil Brussels sprouts for 5 minutes, then drain and rinse with cold water.
- Preheat your oven to 200°C/390°F.
- Cut them in half lengthwise and place them in a salad bowl.
- Add the seasonings: oil, salt and pepper, lemon juice, pressed garlic and grated parmesan.Mix with a spoon then place on a baking sheet covered with parchment paper.
- Bake for 20-30 minutes until the Brussels sprouts are nicely roasted. Personally, I like them well roasted.
- Enjoy it piping hot straight out of the oven.
