This Vegetables Stir-fried Noodles with Soy Sauce recipe is just the kind of very, very easy to prepare dish that will be both balanced and flavorful. In short, she has everything!
This dish with Asian flavors is composed of noodles (your choice of rice or wheat), Asian mushrooms and various finely cut vegetables, served with a delicately flavored sauce.
I like the freshness brought by the chopped fresh onion and the lime juice which balances very well with the roundness and sweetness of the soy-based sauce.
This recipe is quite quick to make, I would say about 15 minutes of time to prepare all the foods and another 15 minutes of cooking time for the vegetables to still be crunchy.
When I cook this recipe, I like to make a little extra so that I have enough to prepare a lunch box the next day. This recipe actually reheats very well.

What ingredients do you need to make this recipe?
- egg noodles or rice noodles
- shiitake or Shimeji or Enokitake mushrooms
- garlic cloves
- carrots cut into small sticks
- fresh bean sprouts (optional)
- cabbage, finely cut into strips
- spring onions
- sunflower or peanut oil
- sesame seeds
- lime cut into quarters
FOR THE SAUCE
- salty soy sauce
- sesame oil
- nuoc mam sauce (fish sauce)
- sugar
- rice vinegar or, failing that, white vinegar
- chili pepper (optional)

Vegetables Stir-fried Noodles with Soy Sauce
Ingredients
- 400 g egg noodles or rice
- 200 g shiitake or Shimeji or Enokitake mushrooms
- 4 garlic cloves
- 2 or 3 carrots cut into small sticks
- 100 g fresh soy sprouts (optional)
- 200 g cabbage finely cut into strips
- 4 to 6 spring onions
- Sunflower or peanut oil
- Sesame seeds
- 1 lime cut into quarters
FOR THE SAUCE
- 8 tablespoons salty soy sauce
- 4 tablespoons sesame oil
- 2 tablespoons nuoc mam sauce
- 2 tablespoons sugar
- 8 tablespoons rice vinegar or white vinegar
- Chili pepper (optional)
Instructions
- Cook noodles according to package directions. Then set aside after rinsing them with cold water.
- Prepare the vegetables and mushrooms.Clean then cut the mushrooms into thin slices if using shiitake, otherwise remove the base and detach the shimeji. Reserve in a bowl.Wash, peel then cut the carrot into julienne strips or sticks. Cut the white cabbage into julienne strips. Reserve in a bowl with the washed bean sprouts.Finely slice the new onion. Reserve.
- Mix all the sauce ingredients in a bowl.
- Heat a wok or large nonstick skillet over medium-high heat and add the oil.Brown the pressed garlic for 1 to 2 minutes, without grilling it.Add the mushrooms and brown them for 3 to 4 minutes, stirring regularly.
- Add the carrot sticks and white cabbage and fry for another 2 minutes.
- Add the noodles and sauce at the same time and heat for another 4 to 5 minutes, stirring well.
- Remove from the heat and add the bean sprouts (if desired) and chopped spring onion.
- Serve, add the sesame seeds, squeeze the lime and enjoy immediately. Enjoy your food !
