Frankly, cabbage is a superfood and I think we underestimate it a little, even though it has everything going for it: economical, antioxidant, rich in vitamins, nourishing and above all, extremely versatile. You can eat it raw, crunchy in a salad, or on the contrary let it cook for a long time until it becomes tender, almost candied, or even, like today, braised. And then, between green cabbage, red cabbage, Chinese cabbage, pointed cabbage or even white cabbage, there is really something to have fun with in the kitchen.
Today, I wanted to share with you a version I particularly like: my pan-braised white cabbage, served with a creamy pepper sauce, a bit like cacio e pepe—you know, that famous Italian pepper and Parmesan (or pecorino) sauce. It’s simple, comforting, and delicious.
For this recipe, I used white cabbage, but if you have green cabbage or Chinese cabbage on hand, it works just as well. A little tip: use kitchen tongs to turn your cabbage wedges in the pan. This prevents them from bruising and helps them maintain a beautiful, even, charred appearance.
What I also love about this dish is its incredible versatility. You can serve it as an appetizer (by reducing the portions), as a main course with grilled bacon or crispy pancetta, or as a side dish with meat or a bowl of rice. And if you want to change things up a bit, know that this braised cabbage also goes very well with a yogurt sauce or even a tahini sauce with a drizzle of spicy oil.

The ingredients you do need to prepare this braised cabbage recipe:
- white or green cabbage
- olive oil
- salt and pepper
- crispy fried onions, served if desired
- grated or shaved Parmesan or pecorino cheese, served

- one clove of garlic, peeled and pressed
- butter
- soy sauce (optional, but for a little heat)
- fresh cream
- grated Parmesan or pecorino cheese
- freshly ground pepper

Ingredients
