Have you ever seen recipes where buttermilk is mentioned? So you may have already wondered: how to make homemade Buttermilk?
So let’s start at the beginning…
What is buttermilk ?
It’s simply curdled milk.
How to make homemade buttermilk?
Well it’s very simple and only requires 2 ingredients: milk and lemon juice!
Adding a splash of acidic lemon juice to milk will cause it to curdle and thicken, adding exceptional fluffiness to your cakes, muffins, crepes, pancakes and waffles. Once you know the trick, you won’t be able to do without it.
Simply pour the lemon juice into the milk and wait ten minutes or less for the reaction to occur. We mix and that’s it, that’s it!
Ideally, it is best to use ingredients at room temperature, the milk will curdle even faster.
You can also use the same process with yogurt or cottage cheese, it will be perfect for making yogurt and herb sauces for example.
How long can you keep buttermilk?
Homemade buttermilk will keep for 2 to 4 days in the refrigerator, in a tightly closed container. All you have to do is mix it before using it.
You can even store it in the freezer for a few weeks/months.
How to make Homemade Buttermilk ?
You will only need 2 ingredients:
- milk: you can use whole milk, semi-skimmed milk, whether fresh or not. For a vegan version, you can also use plant-based milk (oats, coconut, rice, etc.)
- lemon juice (or white vinegar): ideally use freshly squeezed lemon juice or white vinegar. Failing that, you can also use bottled lemon juice or even cider vinegar. This also works…

How To Make Buttermilk
Ingredients
- 25 cl milk
- 1 tablespoon lemon juice or white vinegar
Instructions
- Pour a tablespoon of lemon juice (or white/cider vinegar) into a measuring glass with 25 cl of milk.
- Mix and let sit at room temperature for 5 to 10 minutes.Small lumps will form and the milk will become curdled.
- Mix again and use in the recipe of your choice.
