In the middle of the winter vacations and after a few escapades in the mountains, we love the very gourmet dishes based on melted cheese and potatoes. You know what I mean 😉 Well, this time, here is a recipe that changes a little and that is quite delicious, a Potato Bacon and Prune Pie!
I don’t know if you have already eaten it but it is really delicious and full of flavors.
I made this pie for a client and their potatoes are absolutely perfect in this very simple recipe. They hold together well and are nice and melty. What I also love is that they soak up the flavors of the lardons and prunes for a perfect sweet and savory recipe.
You can also prepare it ahead of time and bake it at the last minute. With a nice green salad, this potato pie is perfect.
Potato Bacon and Prune Pie
What ingredients do you need to make this delicious potato pie recipe?
- potatoes
- milk
- garlic
- heavy cream
- grated comté cheese
- salt and freshly ground pepper
- smoked bacon in small sticks
- pitted prunes
- shallot
- grated nutmeg
- shortcrust pastry
- egg yolk

Potato Bacon and Prune Pie {French Recipe}
Ingredients
- 750 g potatoes
- 1 liter milk
- 1 garlic clove
- 6 tablespoons heavy cream
- 70 g grated Comté cheese
- Salt and pepper
- 200 g smoked bacon in small sticks
- 8 prunes
- 1 large shallot
- 1 pinch grated nutmeg
- 2 rolls of shortcrust pastry
- 1 egg yolk + a little milk
Instructions
- Peel the potatoes, cut them into thin slices and immerse them for 15 minutes in hot milk with pressed garlic and salt. Stir gently from time to time. After cooking, drain and set aside.
- Brown the lardons in a pan with the finely chopped shallot and nutmeg.
- In a lined springform pan, place the shortcrust pastry on the bottom and around the edges.
- Place 2 layers of potato slices on the bottom of the pie and spread a little of the lard and shallot mixture. Add half of the prunes, 3 spoonfuls of cream, half of the grated comté cheese and season with pepper.Repeat the layers of potatoes, lard and shallots, prunes, cream and cheese and finish with a last layer of potatoes.
- Cover with the second circle of dough and seal the edges of your pie. Brush with egg yolk beaten with milk. Make a few slits in the center of the pastry so that air can escape.
- Bake for 1 hour in a preheated oven at 160°C.
- Let cool a little and serve with a nice green salad, for example.
