What ingredients do you need to make this chocolate muffin recipe?
- 130 g flour
- 30 g unsweetened bitter cocoa powder
- 1 teaspoon baking powder
- 75 g brown sugar
- 50 g caster sugar
- 75 g butter
- 20 g intense dark chocolate
- 1 egg
- 150 g warm milk + 1 tablespoon lemon juice (to make Buttermilk)
- 1 teaspoon vanilla extract or vanilla powder
- 60 g dark chocolate chips


How to make muffins?
Preparation is child’s play! Just mix the dry ingredients in one bowl and the wet ingredients in another, before putting everything together. But don’t worry, I detail each step further down in the recipe sheet.
To obtain beautiful, well-risen and well-rounded muffins, one detail makes all the difference: the oven must be well preheated before putting them in the oven. The heat will seize the dough immediately, allowing it to develop a nice hump.
For presentation, use muffin molds lined with paper cases. If you don’t have any on hand, don’t panic! A simple trick is to cut baking paper into squares and place them in the molds, for a result that is as practical as it is aesthetic, which is what I did… 😉

Ingredients
- 130 g flour
- 30 g unsweetened bitter cocoa powder
- 1 teaspoon baking powder
- 75 g brown sugar
- 50 g caster sugar
- 75 g butter
- 20 g intense dark chocolate
- 1 egg
- 150 g 150 g warm milk + 1 tablespoon lemon juice
- 1 teaspoon vanilla extract or vanilla powder
- 60 g dark chocolate chips
Instructions
- In a saucepan, heat the milk then remove from the heat.Add the lemon juice, mix then let stand for 10 minutes.
- Preheat your oven to 200°C.
- In a bowl, mix all the dry ingredients: flour, cocoa, sugar, brown sugar and yeast.
- Gently melt the butter with the dark chocolate then let it sit at room temperature for a few moments.
- In another bowl, mix the eggs, vanilla then the melted butter and milk.
- Gradually pour this liquid mixture into the dry ingredients.The dough is liquid, this is normal.
- Add the chocolate chips then divide the dough into baking paper cases, placed in muffin molds.
- Bake for 18 minutes.
