Have you ever tried the hazelnut-lemon combination? It’s a pure marvel and to be honest, the best is the praline associated with lemon curd… that’s for another time… So let’s get back to our recipe of the day: Hazelnut and Lemon King Cake.
To make this recipe, I made a frangipane from my classic recipe but I replaced the almond powder with hazelnut powder. I then added a nice tablespoon of my brand new lemon and bergamot jam. For the lemon, there are several options, put in your own jam, or your favorite store-bought lemon jam, or put in the zest of a lemon and a tablespoon of freshly squeezed juice.
I also have to tell you that I’m pretty proud of myself because that’s 2 patties where I don’t forget to put the beans! And that’s a victory especially when you have kids waiting for that 😉
Hazelnut and Lemon King Cake
What ingredients do you need to make this delicious King Cake recipe?
- puff pastry
- hazelnut powder
- eggs
- sugar
- butter
- lemon bergamot jam
Hazelnut and Lemon King Cake
Ingredients
- 500 g puff pastry
- 200 g hazelnut powder
- 3 eggs
- 160 g sugar
- 110 g butter
- 1 tablespoon lemon bergamot jam
Instructions
- Preheat your oven to 180°C.
- Place a puff pastry on a flat baking sheet and prick it with a fork.
- In a salad bowl, mix the hazelnut powder, the sugar, the 2 eggs + the white of the 3rd (keep the yolk for the gilding) and the soft butter. Finally add the lemon jam and mix.
- Place the resulting frangipane on the pastry, leaving a border of about 2 centimeters. Place the bean on the frangipane.
- Moisten the edge of the puff pastry with a little water (using a kitchen brush or your fingers), cover with the second puff pastry, and stick the edges together. You can form patterns by gluing the edges together, like in the photo below.
- Make patterns on top and brush with egg yolk diluted with a little water. Make a small hole in the dough in the center of the top.
- Bake for 30 minutes.
