There are dishes that everyone loves, and ramen is undoubtedly one of them. The soup that seduces the eye, then flatters the palate before warming the stomach – that’s ramen, the famous Japanese noodle and broth soup that has conquered the world. And I must confess a soft spot for these light but delicious, fragrant, and comforting soups. The one I’m sharing with you today is no exception: a chicken ramen recipe revisited in my own way, ultra-easy and quick.
For this recipe, I opted for the chicken and mushroom duo. Simple and effective. I used button mushrooms because that’s what I had on hand, but if you have shiitake mushrooms, I can only encourage you to use them; they will give an even more pronounced flavor to this easy chicken ramen. And since I know some of you prefer vegetarian dishes, you can opt for a tofu version.
So, how do you make delicious homemade ramen without the hassle? It all starts with the magical garlic-ginger duo, which I sauté to enhance the flavors. Next comes the broth: a blend of chicken (or vegetable) broth, soy sauce, fish sauce, miso paste, and mushrooms. You can dip the noodles directly into it, with a few green onions to enhance the flavor. And then there’s the option to customize it: soft-boiled or hard-boiled egg, chili oil, sesame seeds, sautéed vegetables… everyone has their own topping!
Well, I have to say the result lived up to our expectations: not a drop survived in the bowls. My little one even said, “That’s incredible,” as proof. At the end of the day, a bowl of Japanese soup warms the heart and takes your breath away without even leaving home.

Ingredients you need to make a Ramen dish at home:
- Chicken fillets
- Fresh eggs
- Button or shiitake mushrooms
- Ramen noodles or wheat noodles
- One clove of garlic, peeled and pressed
- Spring onions or shallots
- Fresh ginger, peeled and grated, or powdered ginger if preferred (in this case, use a teaspoon)
- One chicken or vegetable broth for a vegetarian option
- Savory soy sauce
- Sweet soy sauce
- Blonde miso paste
- Nuc mam (Vietnamese fish sauce)
- Sesame oil

Ingredients
- 200 g chicken breast
- 4 eggs
- 2 spring onions or 2 finely chopped shallots
- 200 g button or shiitake mushrooms
- 125 g ramen noodles or wheat noodles
- 1 garlic clove peeled and pressed
- 1 liter of water
- 3 teaspoons fresh ginger peeled and grated
- 1 chicken or vegetable stock cube
- 4 tablespoons salty soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon light miso
- 2 tablespoons sweet soy sauce
- Sesame oil

Instructions
