A few weeks ago a colleague of mine asked me if I had a soft pretzels recipe on my food blog and I didn’t…as it was one of 250 recipes on my ‘to do’ list. ‘, I thought it was high time to get started and give it a try. 1st try and it’s a success!
I even made 2 versions but the 2nd I keep it for the beginning of the year.
For this 1st try, I wanted to try the Alsatian salted pretzel, you know, it’s the one you find on Christmas markets and that you like to taste while admiring the end-of-year decorations.
With experience I get better and better at making my bread and brioche recipes and the secret is to take the time so that the dough takes all its time to rise well. For these pretzels, for example, I started the dough at noon and I cooked them minute at dinner, to accompany a soup.
The kids (and us too…) loved it! These pretzels smelled really good and had a very soft texture on the inside and a thin salty and crispy crust on the outside. So, you like it ?
I really recommend them because it is a very easy recipe to make. They will be perfect as is or garnished with butter, gravlax salmon or smoked trout rillettes, for example.
You can make them for the evening aperitif and reheat them (if you have any left over) for breakfast/brunch with homemade jam or praline.

What are the ingredients you do need to make this delicious Soft pretzels recipe?
- flour
- soft butter
- fine sea salt + coarse salt
- some water
- whole milk
- baker’s yeast
When it is baked, you can and so cheese and honey, it will be a perfect savoury snack.

Soft pretzels {homemade recipe}
Ingredients
For dough
- 500 g flour
- 80 g butter at room temperature
- 12 g fine sea salt
- 15 cl warm water
- 15 cl warm milk
- 20 g fresh baker's yeast or 8 g if dry
For poaching
- 1 l water
- 1 tablespoon coarse sea salt
- 100 g baking powder
For topping
- coarse sea salt or gomasio
- sesame seeds
Instructions
- In the bowl of your food processor equipped with a dough hook, pour the crumbled yeast with the warm milk and water. Leave for 10 minutes.Add the flour, salt and chopped butter.Start to turn on slow speed and then increase little by little to a medium speed. Let the dough knead until it becomes smooth and soft, about 10 minutes.If you don't have a food processor, this can be done by hand but it will take a little longer.
- Strain your bowl and let it sit at room temperature (or near a radiator, or in your oven with a bowl of hot water on the bottom and the door slightly ajar) until the dough doubles in size. This may take 1 to 2 hours.
- Flour your clean work surface and divide the dough into 10 equal portions and shape the pretzels. Place them on a baking sheet covered with baking paper and let them rest for at least 30 minutes, covered with a clean and dry cloth.
- Preheat your oven to 200°C.
- In a large saucepan, boil water with salt and baking soda. Poke the little balls of dough one by one for 30 seconds.Drain well and place on a baking sheet lined with baking paper, spacing them well apart. Sprinkle a little coarse salt or gomasio on top.Bake for 20 minutes until the pretzel buns are golden brown.Let cool on a wire rack and eat immediately, it's a treat!
