This Thai Cucumber Salad recipe with coconut milk is a pure marvel! I can tell you that it’s one of my summer favorites!
It’s a real discovery for me, as I’m a fan of these kinds of fresh, tasty recipes.
If you like Asian flavors and coconut milk, this is the recipe for you! I love the freshness of the cucumber and the roundness of the dressing in this salad.
What’s more, it’s a great recipe, light as anything and doesn’t even contain any oil… 😉
It’s ideal as a starter, or even as a side dish.
Thai Cucumber Salad Recipe with coconut milk
What ingredients do you need to make this Thai cucumber salad recipe?
- an organic cucumber
- a few sprigs of fresh coriander
- a few sprigs of fresh mint
- sesame seeds or crushed roasted peanuts
I didn’t add chilli because we ate this salad with the kids. But you can add some if you like.
This salad recipe is also delicious with a few homemade red onion pickles. A real delight!
And if you ever want to serve this salad as a main course, don’t hesitate to add pre-cooked rice vermicelli, or udon (Japanese) noodles, for example…
FOR SAUCE
- organic lime (for decoration and sauce)
- coconut milk
- nuoc mam sauce
- peanut butter
- pressed garlic clove
- powdered or freshly grated ginger

Thai Cucumber Salad Recipe with coconut milk
Ingredients
- 1 organic cucumber
- A few sprigs of fresh coriander
- A few sprigs of fresh mint
- 1 tablespoon sesame seeds or crushed roasted peanuts
FOR THE SAUCE
- 1 organic lime (1/2 for decoration and 1/2 for the sauce)
- 4 tablespoons coconut milk
- 2 tablespoons nuoc mam sauce
- 1 teaspoon peanut butter
- 1 pressed garlic clove
- 1 teaspoon powdered ginger or 2 cm fresh ginger (grated)
Instructions
- Wash and dry the cucumber before slicing into thin rounds. Place in a salad bowl.
- Wash and dry the fresh herb leaves, chop finely and add to the cucumber.
FOR THE SAUCE
- Pour all sauce ingredients into a small jam jar: juice of 1/2 lime, coconut milk, nuoc-mam, peanut butter, pressed garlic and ginger.Stir until smooth.
- To serve, pour the sauce over the cucumber.
- Add lime slices and sesame seeds or crushed peanuts.Stir and enjoy!
