Well yes, it’s Easter weekend so what’s better than preparing a chocolate dessert! I am therefore pleased to share with you this delicious Chocolate Coconut Layer Cake recipe (which you can obviously make all year round!).
This cake is very simple to make and it is made up of 2 layers: a first with coconut (we then find it at the top because we turn the cake over to serve) and a second with chocolate. We could almost call it the “Bounty cake” for its flavors.
For the record…, the first time I made this chocolate-coconut cake, it was during a week when the children were away from home, on vacation with their grandparents. I took it to my coworkers (who had a great time, I think…) and when I told my kids, they were so jealous that we started making it again together. And everyone loved it!
I then put cocoa powder on top and a little icing sugar to recall the two-tone appearance of the interior, but it’s when cutting that this cake is really pretty. You can also cover it with a pretty chocolate frosting if you like.
To make the icing, simply mix 100 g of melted dark chocolate and 100 g of full-fat liquid cream then pour everything onto the cake placed on a baking rack. You can even sprinkle a little grated coconut for decoration.
As for the tasting… well if you like chocolate and coconut, then you absolutely have to try this one, it’s a marvel! I’m salivating just thinking about it… 🙂

- grated coconut
- coconut cream or milk
- sweetened condensed milk

Chocolate Coconut Layer Cake
Ingredients
FOR THE COCONUT LAYER
- 150 g grated coconut
- 20 cl coconut milk or cream
- 20 cl sweetened condensed milk
FOR THE CHOCOLATE LAYER
- 4 eggs
- 100 g brown sugar
- 200 g dark chocolate
- 100 g half-salted butter
- 50 g flour
- 20 g cornstarch
- 1 teaspoon baking powder
Instructions
FOR THE COCONUT LAYER
- In a salad bowl, mix the coconut, coconut cream (or milk) and sweetened condensed milk.
- Line your cake mold with baking paper previously cut to the size and shape of the mold.Line the bottom with the coconut paste, pressing a little.Reserve in the refrigerator.
FOR THE CHOCOLATE LAYER
- In a salad bowl or in the bowl of your pastry mixer, pour the eggs and the sugar then whisk everything for 5 minutes. The mixture should foam well.
- Meanwhile, melt the butter and chocolate in a bain-marie.
- Then add the sifted flour, cornstarch and baking powder. Mix well.
- Gradually pour the chocolate mixture into the egg-sugar mixture while mixing gently until everything is well combined.
- Pour over the coconut base in the cake pan.
- Preheat your oven to 150°C.
- Bake for 50 to 55 minutes.
- To check the cooking, insert the tip of a knife; there should be no raw dough on it. If so, extend cooking for 5 minutes.
- Remove the cake from the oven and let cool before unmolding, pouring into a serving dish. The chocolate is thus at the bottom and the coconut at the top.
- To serve you can leave it as is, or sprinkle with cocoa, icing sugar, grated coconut or even make a glaze.
