French thin Apple Pie Recipe

Last Wednesday, I wanted a simple, quick and comforting dessert. A crispy French thin Apple Pie recipe, does that mean anything to you? Three ingredients, a few minutes of preparation and an absolutely irresistible result.
Of course, I took the kids along for the ride. They love getting their hands dirty (especially when it comes to making a dessert). Peeling the apples, cutting them into thin slices, spreading the caramel… Everyone had the mission of finishing with an ultra-delicious snack.
One of the big advantages of this thin puff pastry apple tart is that it doesn’t even require a mold. A simple parchment paper on a metal baking sheet and off you go! You can make it in a rectangular version, a classic round version or even in individual portions if you want a more elaborate presentation.

What ingredients do you need to make this thin caramelized apple tart?
- a good quality butter puff pastry (or homemade, if you are motivated, I have an easy and quick version to prepare)
- 3 or 4 well-chosen apples (Golden or Pink Lady, perfect for cooking)
- salted butter caramel, to generously coat the apples, homemade, it will be even better!
And if you prefer a version without caramel, no worries! A little melted butter and brown sugar or vanilla sugar, and you’re done.

How to prepare this apple puff pastry tart?
We start by preheating the oven to very hot, in fan mode. Then, simply roll out the dough, arrange the apples in a pretty rosette or in rows, then cover with caramel or the butter-sugar mixture. A few minutes in the oven (preferably at the bottom of the oven for optimal cooking) and magic: a crispy, golden tart with melting, fragrant apples.




While cooking, the smell that spreads in the kitchen is just incredible. This sweet mix of warm apples, caramel and golden pastry is pure olfactory happiness. It is a totally regressive dessert that takes us back to childhood and also allows us to recreate the same memories with mine…

This thin tart is also perfect for an impromptu snack, a last-minute dessert or even for a gourmet brunch. With a touch of cinnamon or a few slivers of toasted almonds, it takes on a whole new dimension.
It can easily be kept at room temperature for a few days (if there are any left!). But between us, it’s even better the same day, when the pastry is still crispy.

French thin Apple Pie Recipe
Ingredients
- 1 pure butter puff pastry
- 3 or 4 firm-fleshed apples such as Pink Lagy or Golden
- 2 or 3 tablespoons liquid salted butter caramel
Or as a substitute for caramel
- 2 tablespoons melted semi-salted butter
- 3 tablespoons brown sugar
Instructions
- Preheat your oven to 200°C.
- Roll out your puff pastry on a baking sheet covered with parchment paper.
- Prick the dough with a fork to prevent it from puffing up during cooking.
- Peel and core the apples, then cut them into very thin slices. Arrange them in a line on the puff pastry or in a rosette.
- Heat your caramel in the microwave or in a bain-marie so that it is liquid and easy to spread.Using a kitchen brush, spread the caramel on the apple slices.
- Bake in the bottom of the oven and cook for 25 to 30 minutes.Watch the cooking carefully, it can vary a little depending on your oven.
- Serve warm or cold, with or without a scoop of ice cream. Enjoy it!
