This dish will give you everything you need for a complete meal: the lightly spiced and fragrant vegetables, the lentils for protein, and the brown rice for the fiber and energy you’ll need to get through the day.
I made this recipe for the first time when I was balancing my food diet and since then I haven’t been without it, a bit like my chickpea curry. To serve your plate, add half of the vegetables, a quarter of lentils and a quarter of brown rice.
For the more gourmands among you, you can even serve it with homemade cheese naans which you can even make with semi-wholemeal flour if you want to stay in a healthier version.
To make this lentil curry, choose vegetables according to the season. To do this, favor local producers when you go to the market and do not hesitate to also consult my seasonal fruits and vegetables calendar.
When I prepare this type of dish, I like to make a good quantity so that I also have some for my lunch boxes that I take to work.
Green Lentil and Vegetable Curry Recipe
WHAT INGREDIENTS do YOU NEED TO MAKE THIS LENTIL CURRY RECIPE?
- cooked green lentils (canned)
- shallots
- cloves of garlic
- olive oil
- carrots
- fresh or powdered ginger
- curry powder
- coconut milk
- fresh spinach leaves
- salt and pepper
- a spring onion to serve
For vegetables, depending on the season I like to use carrots, leeks, zucchini, fresh spinach, sweet potatoes…

Green lentil and vegetable curry
Ingredients
- 250 g cooked green lentils (canned)
- 2 shallots
- 2 cloves garlic
- 4 or 5 carrots
- 2 centimeters fresh or powdered ginger
- 2 teaspoons curry powder
- 10 cl coconut milk
- 2 handfuls of fresh baby spinach
- 1 tablespoon olive oil
- Salt and pepper
- 1 spring onion
Instructions
- Peel and finely slice the onion, chop the garlic and put it in a pan with the olive oil.Brown gently while stirring.
- Peel the ginger, cut it into pieces and add it to the pan.
- Wash, peel the carrots and cut them into small cubes. Place them in the pan with the curry powder and stir. Cook for 10 minutes covered.
- Add the baby spinach, coconut milk and lentils. Salt, pepper and stir. Continue cooking for 10 minutes.
- You can then serve with a little rice and finely chopped spring onions, or even fresh coriander.
