Homemade Corn Flour Tortillas: Easier Than You Think!
Honestly, I don’t know why, but for a long time I thought making your own tortillas was reserved for experienced cooks or die-hard Mexican food enthusiasts. A bit like homemade bagel or burger buns… I had the impression it was time-consuming, technical, and probably messy. Well, I was completely wrong.
Dare to give it a try, you’ll see, it’s super simple and quick. I’ve been using this recipe for several years now, and I wouldn’t change a thing! That’s why I’ve revisited it and am sharing it with you again today.
It’s definitely a dish you can improvise during the week without spending hours on it. And the result is fantastic! Nothing like the fluffy, slightly elastic pancakes from the supermarket. Fluffy, slightly crispy around the edges when you quickly toss them in the pan, they have that hint of corn flavor that immediately adds another dimension to your homemade fajitas.
For this version, I tested a batter made with corn flour and wheat flour. Why this combination? Simply because corn flour, on its own, doesn’t contain gluten, so it doesn’t make for a batter that holds together well. The wheat binds everything together without masking the corn flavor. But if you don’t have corn flour, you can definitely start with wheat flour, which is easier to find…

WHAT INGREDIENTS do YOU NEED TO PREPARE THIS DELICIOUS HOMEMADE TORTILA RECIPE?
- Corn flour
- Flour
- Soft butter at room temperature
- Water
- Salt
- Sugar
And just to be clear: we’re not talking about the Spanish potato and egg tortilla (also very good, but nothing related). No, we’re talking about Mexican cuisine, with tortillas that can be filled however you like: crunchy salad, ripe tomatoes, avocado slices or guacamole, marinated chicken, ground beef, chili con carne, kidney beans, cheese… It’s truly the kind of dish where everyone can create their own version, and it’s a hit with kids and adults alike.
In short, if, like me, you thought it was too complicated to make at home, I strongly encourage you to give it a try. You’ll see, it’s child’s play. And best of all, it’s so much better!

Homemade Corn Tortillas recipe
Ingredients
- 100 g corn flour
- 100 g flour
- 50 g butter
- 8 cl water
- 1 pinch salt
- 1 pinch sugar
Instructions
- Mix the flour with the salt and sugar.Add the diced butter. Rub it in well with your fingers.Gradually add the water until you get a soft dough.Cover with a cloth and let the dough rest for 30 minutes to 1 hour.
- Form the dough into a log and divide it into 6 balls.Lightly flour your work surface and roll out each ball of dough thinly using a rolling pin.
- Heat a dry (no fat) skillet over medium heat. When hot, place a tortilla on top.Cook for 2 to 3 minutes, until golden brown.
- Turn the tortilla over and cook for another 1 or 2 minutes to brown the other side the same way.Be careful, it burns quickly.
- Repeat with the remaining dough.Place it in a large dish covered with a clean, dry cloth.You can quickly reheat them before serving, in a pan or in the microwave.
