Today, I literally improvised this homemade strawberry syrup. I had seen that you could make it without waste in several recipes, using the strawberry tails and it’s true, it works and it’s delicious!
Of course, you’ll have to leave some strawberry flesh behind… 😉
You may be a little skeptical, as I was before trying this recipe… ? Then sincerely, don’t be because it’s delicious!
This morning, I bought 500 g of strawberries at the market and while preparing them for our dessert, I thought of this no-waste recipe.
So I saved my strawberry tails with a little flesh and went for it. The color is gorgeous, the flavor is exquisite and the taste is delicious!
The children, who are not usually very fond of fruit juice, gobbled up the contents of their little glasses served at the aperitif, throwing “mmmmmhhhh” at everything.
If you wish, you can flavour your syrup by adding a little vanilla or fresh herb leaves like mint or basil. You’ll need to add them just as you’re cooking so that they infuse.
The vanilla should be added at the beginning of the cooking time and the fresh herbs 5 minutes before the end.

Homemade Strawberry Syrup
Ingredients
- 100 g strawberry tails with a little flesh
- 2 tablespoons lemon juice
- 140 g powdered sugar
- 25 cl water
Instructions
- Mix all ingredients in a saucepan.
- Heat over low heat and stir regularly. When sugar is dissolved, continue cooking for 20 minutes, covered.
- Pour into a colander and place over a bowl. Gently mash strawberries with the back of a spoon to release juice and flesh.
- Pour into a sterilized bottle or jar and let cool.Place in the refrigerator and consume within a week.
