I had seen this Crispy Carrot Fries with Parmesan recipe on Pinterest, but couldn’t get my hands on the video, so I tried my own version with the memories I had of it and I have to tell you say it’s a real success!
This recipe can be served as an aperitif, starter or even as a side dish and you can personalize it according to your tastes by adapting the spices or herbs you put in it, the type of cheese and the cooking time which will make the most or less soft or more or less crispy. I’ll explain all this to you a little further down…
Crispy Carrot Fries with Parmesan Recipe
What you’ll love about this carrot chips recipe:
- its flavors: the slightly sweet side of the carrots blends perfectly with the sweetness and flavors of the cheese (Parmesan or Pecorino). Adapt the spices to your tastes, for me, garlic and smoked paprika, the perfect combo!
- its textures: depending on whether you let them cook more or less, they will be both tender and crispy thanks to the parmesan which will have toasted in the oven, a real treat!
- its level of difficulty: this recipe is extremely simple and quick to prepare, you just need to boil the carrots cut into sections, then crush them on a baking sheet using a glass (this task is totally regressive and great to make) then season according to your tastes then spend a few minutes in the oven to finalize and everything is very crispy.

Crispy Carrot Fries with Parmesan
Ingredients
- 4 large carrots
- Olive oil
- Salt and pepper
- Freshly grated Parmesan or Pecorino
Instructions
- Lavez et épluchez les carottes.
- Coupez-les en tronçons de 4 centimètres environ et faites cuire pendant 15 à 20 minutes dans de l'eau bouillante.
- Ecoutez et coupez chaque tronçons en 2 ou 3 tranches.
- Déposez-les sur une plaque de cuisson et écrasez à l'aide d'un verre plat.
- Arrosez d'un filet d'huile d'olive, salez légèrement et poivrez.
- Parsemez de parmesan râpé.
- Enfournez pendant 15 à 20 minutes dans un four préchauffez à 180°C.
- Dégustez à l'apéritif servi avec la sauce de votre choix.
