Fresh Tomato Tart Recipe

Fresh Tomato Tart: the perfect recipe to extend the flavors of summer.
I’d better give credit where credit is due right away—to Xavier! It was actually a friend who introduced me to the idea of this cold savory tart with fresh tomatoes. He made it for us this summer, and honestly, I fell in love with it instantly. First, I loved the concept—it’s as simple as it is clever—and then, of course, the taste! It’s a recipe that delights both the palate and the eyes.
The concept is brilliant because there’s no need to cook the filling for ages. You simply prepare the crust, blind-bake it for about ten minutes, and let it cool before adding the toppings. That’s it! The crispy crust is topped with fresh cheese, fresh tomatoes, and a few extras that you can easily customize to your liking. I’ve included several ideas for variations further down the page.
Since trying this tart in early August, I’ve made it at least four times already… Whenever I found a moment to turn on the oven, I took the opportunity! I’ve tested several versions—using just tomatoes or a tomato-cucumber mix—and switched up the toppings based on my mood. Every time, the verdict was the same: it was a huge hit.
What I love most about this cold savory tart is how fresh, quick, and truly easy it is to prepare. It’s a nice change from standard quiches and savory tarts, yet perfect for a summer lunch, a refreshing starter, a picnic, an informal cocktail-style dinner, or a fuss-free meal. Plus, when late-summer tomatoes are perfectly ripe, colorful, and bursting with sunshine, it would be a shame not to make the most of them! So, if you have some lovely fresh tomatoes on hand, I highly recommend giving this recipe a try. It’s incredibly simple, but that’s exactly what makes it so charming. And above all, don’t hesitate to put your own spin on it—it’s the perfect base for letting your creativity run wild.
I can’t wait to see your versions! If you make this cold tomato tart, please send me your beautiful photos; I’m eager to see how you adapt the recipe…
And thanks, Xav! 🙂

Instructions
For the pie crust
- Preheat your oven to 180°C.
- Start by preparing your dough (if making it from scratch) and roll it out into a round shape (for a more attractive presentation). If using store-bought dough, simply unroll it.Place the dough flat on a baking sheet lined with parchment paper.Prick the base with a fork to prevent it from puffing up during baking.
- Bake for 10 to 12 minutes for store-bought dough, or 15 to 20 minutes for homemade dough.Keep a close eye on it: the dough should start to turn golden but not overcook, otherwise it might crack when sliced.
- Then, let it cool.
For the topping
- Wash and dry your tomatoes, then cut them into thin slices.Lightly salt them and let them drain.
- Prepare the base of the filling by mixing the cream cheese, chives, and finely chopped shallot (or spring onion) in a bowl.Spread the mixture over the baked and cooled tart shell, leaving a margin of about 1 centimeter around the edges.
- Arrange the tomato slices on the fresh cheese.
- Then add the ingredients of your choice: here, chives, pine nuts, and red onions pickles.
- Bon appétit!
