Well, we agree, the weather is not yet perfect for picnics but I suggest you practice making delicious Goat Cheese and Walnut Muffins to put in your basket.
I made this recipe using little goat cheese because it has the perfect texture and flavor. The little pieces of cheese are very soft and you can find them in the muffins when you eat them.
A real treat, almost like souffles when they come out of the oven!
They are so good and easy to make that I couldn’t keep them to myself. Plus, living in nut country, what could be better.
For those who want to, you can also add a spoonful of honey to the dough or aromatic herbs like rosemary… Or for the more gourmet, just before serving, you can even add a drizzle of honey on top of the muffins.
They will be very good as an aperitif with a nice green salad.
Goat Cheese and Walnut Muffins
What ingredients do you need to make this recipe for goat cheese and walnut muffins?
- goat cheese
- Gruyere cheese
- nuts
- flour
- yeast
- salt
- eggs
- butter
- milk
- honey
Goat Cheese and Walnut Muffins
Ingredients
- 220 g flour
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 2 beaten eggs
- 80 g cooled melted butter
- 20 cl milk
- 120 g goat cheese
- 80 g grated gruyere cheese
- 100 g walnuts peeled and coarsely chopped
Instructions
- Preheat your oven to 180°C.
- Mix all the ingredients in a bowl, lifting the dough so that it airs out.
- Divide the batter between greased muffin tins or paper baking sheets.
- Bake at 180°C for 10 minutes, then move to 200°C for another 10 minutes.
- Check for doneness by sticking the tip of a knife into a muffin. If the blade is clean, the muffin is done. If there is any batter left, extend the baking time by a few minutes.
- Remove from oven, unmould and cool on a wire rack.
