Leek Fondue {Easy French Recipe}

Leek fondue is a great classic of French cuisine and it is a preparation that I use regularly at home. It’s a very simple and quite delicious recipe.
We eat it as is as an accompaniment to meats (especially white meats) for example, or with chickpeas or beans… I also like to accompany this leek fondue with pasta, rice or even potatoes. sautéed. It is also a side dish that will be delicious accompanied by fish or seafood such as scallops.
In my next recipe, I will even show you how to serve it as a savory crumble, it’s a real treat!
This recipe uses butter AND cream, but if you want a lighter version, I have a technique that I use often. I reduce the quantities of butter (or even replace the butter with a little olive oil) and I add a little cream at the end of cooking or fresh goat’s cheese.
The secret to a good leek fondue is to simmer it gently and slowly, with a lid. The water contained in the leeks will have the effect of steaming and the leek will gradually soften. Cook well over low heat, the leeks should not brown (even if I like it when they start to caramelize a little…). 😉

- leeks, if you want a very tender fondue, mainly use finely chopped leek whites (for my part, I still add greens and cook a little longer covered)
- half-salt butter
- dry white wine
- fresh liquid cream
- a little grated nutmeg
- pepper and salt

Ingredients
- 5 white leeks
- 1 tablespoon semi-salted butter
- 5 cl dry white wine
- 10 cl fresh liquid cream
- Black pepper
- 1 pinch grated nutmeg
- Salt (optional)
Instructions
- Rinse the leeks under water.Take the whites and tender greens of the leeks. Wash them carefully and cut them finely.
- In a large skillet, melt the butter and add the sliced leeks. Stir.Add the white wine, salt, pepper, add the grated nutmeg.Cover and cook over low heat for 20 minutes.
- Add the crème fraîche and cook for another 5 minutes over low heat, uncovered. Stir occasionally.Serve hot.

I’m currently doing an apprenticeship in Germany. My boss bought some leeks and asked me to make something out of them. I had no idea what to do so after a quick google search, I came across this recipe. It worked great! My boss enjoyed it but then told me I should never call it a “fondue”. Is there a reason why this recipe is called a fondue?

In France, “fondue” means “melt”. That’s the French name given to this dish because the leeks are cooked gently, almost as if they were melting. 😉
