Well, after my last tartiflette recipe, I had to balance it out a bit with a slightly lighter recipe. But be careful, you who don’t like soups, don’t stop at first appearances, this sweet potato and coconut milk soup recipe is anything but boring. It is velvety and delicious.
I served this soup with some homemade croutons. For this, I used a loaf of bread from the day before that I cut into small cubes. I placed them in an oven dish, poured a drizzle of olive oil, a pinch of salt and a little garlic powder. I stirred and baked for around ten minutes in an oven preheated to 180°C.
Everyone loved this sweet potato and coconut milk soup and my little man asked me if there was more… Well no… It will be for next time and I will make one little more… 😉
I didn’t add a lot of water because I wanted a rather thick and velvety texture, to easily give with a spoon to my one-year-old little one. If you want a slightly thinner soup, you can double the volume of water or add it at the end of cooking, when serving.
