Cottage Cheese with Wild Garlic

Cottage Cheese with Wild Garlic: a springtime feast not to be missed.
If you love simple and delicious recipes that evoke the scents of spring, you’ve come to the right place. Today, I’m sharing with you this fresh cheese with wild garlic recipe, a delicious spread to enjoy without moderation.
Wild garlic is kind of my unofficial signal that warmer weather is coming. As soon as its leaves start to peek through the undergrowth, I can’t resist picking some during my weekend family walks. Okay… this time, I confess, I cheated: a lovely colleague brought me back a magnificent bunch of vibrant green garlic after her jog (thanks again, Justine!).
Every year, I take real pleasure in cooking with this wild plant. Its aroma is unique: garlicky, but very delicate. Nothing like a classic garlic clove; it’s something a little more subtle, but with just enough character to enhance any dish.
For this version, I chose to use cream cheese – like Philadelphia, Carré Frais, or even fresh goat cheese – but you can easily adapt the recipe with butter if you prefer a creamier texture. As for preparation, it couldn’t be simpler: a quick whizz in a food processor or a good knife to finely chop the leaves, and you’re done.
Then, the possibilities are almost endless. Try it on toast as an appetizer, with breadsticks, on hot potatoes, with roasted vegetables, on grilled meat, or even stuffed into a Brie or Camembert… not forgetting a pasta sauce, with a little Parmesan.
In short, an incredibly simple recipe that you’ll love…
