I had wanted to try eggplant, tomato and mozzarella pizza for several summers and it was the 3 times a day recipe that reminded me.
I roasted tomatoes in the oven and it’s really delicious! In fact, the eggplants and tomatoes are cooked separately and assembled at the last moment with a few basil leaves added at the last minute.
You will see that I do not heat the mozzarella in the oven, I like to keep it fresh because it retains more flavor, and it melts slightly on the vegetables but if you prefer it warm. You can always grill it for a few seconds or minutes, on your eggplant pizza.
For even more deliciousness you can even use buffalo burrata, it’s a guaranteed treat!
You will see sesame seeds in the photos, that’s because for dressing I used gomasio, a mixture of sesame and salt.

What ingredients do you need to make this delicious eggplant, tomato and burrata pizza recipe?
- eggplant
- small bunch or large cherry tomatoes
- buffala or burrata mozzarella
- brown sugar
- garlic
- basil leaves
- salt and pepper
- olive oil
- of gomasio

Eggplant Pizza Recipe with Tomato and Mozzarella
Ingredients
- 2 eggplants
- 12 small grape tomatoes or large cherry tomatoes
- 1 ball of buffala mozzarella or burrata
- 1 tablespoon brown sugar
- 1 garlic clove
- Basil leaves
- Salt and pepper
- Olive oil
- Gomasio (optional)
Instructions
- Preheat your oven to 210°C.
- Wash, dry and cut the eggplants into large slices of 1 to 2 centimeters.
- Cover your baking sheet with parchment paper, then place the eggplant slices on it. Brush them with olive oil using a kitchen brush, then season generously with salt and pepper, set aside.
- In a baking dish, place the tomatoes with the minced garlic, sprinkled with brown sugar, salt, pepper and a good drizzle of olive oil.
- Cook the eggplants and tomatoes for 40 minutes.
- To serve, arrange the eggplant slices on plates, then garnish each slice with a tomato. Lightly crush the roasted tomatoes to release the juice, then add a small piece of mozzarella, basil leaves, season, then serve.Bon appétit!
