You can prepare this salad at the last minute although I advise you to give it 1 hour in advance so that the aromas develop well, and you can keep it refrigerated for 1 to 2 days, in an airtight glass container.

Cucumber Raita Recipe | Indian Yogurt Dip
Ingredients
- 1 seeded cucumber
- 1 pot of Greek yogurt (around 120 g)
- 1 shallot or onion very finely chopped
- 1/2 degermed garlic clove
- 2 tablespoons chopped cilantro or flat-leaf parsley
- 2 tablespoons chopped mint
- 1 pinch chili powder
- 1 teaspoon cumin seeds
- 1 teaspoon cumin powder
- Salt and pepper
Instructions
- Peel and core the cucumber. Grate it finely or cut it into small pieces.Place it in a large bowl.Add salt and let drain for about 15 minutes.
- Meanwhile, chop the shallot and herbs and press the garlic.
- Reserve in a bowl.Empty the water from the container that contains the cucumber.
- Add the Greek yogurt (or cottage cheese), chili, cumin and pepper.Incorporate the ingredients you prepared (herbs, shallot and garlic).Mix well and refrigerate until ready to serve.
