Crumble is one of my children’s favorite desserts (and me too) and I must say that this strawberry and rhubarb crumble recipe was a real hit with everyone! It really didn’t last long. In addition, the rhubarb season is quite short so you have to take advantage of it because it is at its peak at the moment.
For my part, I love crumbles, whether sweet or savory: apple, pear, leek, tomato, apricot… I really like the balance between fruits (or vegetables) and the crunch of the crumble on the top. In addition to that, crumble is a very easy and quick dessert to prepare, you just need to choose seasonal fruits.
For this one, I thought they wouldn’t like the tangy side of rhubarb, but actually not at all! They loved it and I must say that it’s also what I like because I find that it balances very well with the sweetness provided by the strawberries and the softness of the toasted crumble on top.
In any case, the rhubarb and strawberry combo always works very well! In my recipe, you will see that I also added 2 small apples, it is optional but I like the roundness and consistency that it brings to this dessert.
Strawberry and Rhubarb Crumble Recipe
What ingredients do you need to make this recipe?
- fresh rhubarb stalks
- fresh strawberries
- small apples
- lemon juice
- brown sugar
FOR THE CRUMBLE
- flour
- soft semi-salted butter
- brown sugar
- small oat flakes (optional)
In my crumble recipes, I always brown my fruit beforehand; it gives more liking (especially for rhubarb).

If you like sweet desserts, feel free to add more sugar with the fruit. I tend not to put a lot of sweetness in my desserts and I know that it can sometimes be unpleasant…

Strawberry and rhubarb crumble
Ingredients
- 500 g fresh rhubarb stalks
- 250 g strawberries
- 2 small apples
- 1 tablespoon lemon juice
- 50 g brown sugar (or more)
FOR THE CRUMBLE
- 100 g flour
- 80 g semi-salted butter at room temperature
- 50 g brown sugar
- 30 g small oat flakes (optional)
Instructions
- Wash the fruits.
- Peel the apples and cut all the fruit into small pieces.Place in a saucepan.
- Cut the ends of the rhubarb stalks and peel them to remove the strings.Cut them into pieces of about 1 centimeter and add them to the apples in the pan.Add 50 g of brown sugar and the lemon juice.
- Cook over medium heat for 10 minutes, stirring constantly. Add the strawberries and cook for another 5 minutes, stirring.Pour into a baking dish.
- Preheat your oven to 200°C/390°F.
- Prepare the crumble by pouring in the flour, brown sugar and butter and sanding with your fingers until the crumble forms.Add the oatmeal and stir with a fork.
- Pour the crumble batter over the fruit and bake for 30 to 40 minutes, until the crumble is golden brown.
- Serve warm or cold, depending on your taste.
