Sausage Rougaille has been at the top of my list of recipes to make for a very long time and I don’t know why I haven’t tried it before because it is truly a pure delight and a very simple recipe to make.
Speaking of lists of recipes to make, I would like to know if I am the only one who always has 300 recipes to test permanently… 😉 However, I really feel like I try new things every day and each time I have one or two new recipe ideas that come to me and it always takes so long… ahhahha!
So the other day, when I went to my butcher, I saw some smoked sausages and I bought 2 and ate them with potatoes, a salad and cancoillotte (creamy cheese). We were far from an exotic dish that is rougail saucisse, weren’t we!?
Yes, but here it is, when I was cooking my smoked sausages, I had no more potatoes and I immediately thought of this rougail, fortunately, I had a jar of crushed tomatoes!
You will see that in my recipe I add a spoonful of peanut butter, it is totally optional but I like the light taste and the roundness that it brings to my rougaille. You can then serve it with rice for example.

What is rougail ou rougaille?
Rougail is a dish originating from Reunion Island (but also from Madagascar and Mauritius). It is a spicy and simmered dish made with tomatoes, vegetables and ginger, you can add smoked pork sausage and serve it with rice.
This is an easy recipe to prepare at home, which requires few ingredients and little equipment to prepare it. This simple dish will delight all the people who taste it… and each guest will be able to measure the level of spice they want to add to their plate…
What ingredients do you need to make this sausage rougail recipe?
- smoked sausages
- onion
- garlic
- tomato pulp or fresh tomatoes cut into small cubes
- fresh or powdered ginger
- fresh or powdered turmeric
- sweet (or spicy) pepper and/or paprika (smoked is even better)
- peanut butter
- flat-leaf parsley to serve or fresh coriander
- olive oil
- salt and pepper
You can also add the diced sweet potatoes 15 minutes before the end of cooking and let them cook in the rougail for the last quarter of an hour.

Sausage Rougaille Recipe
Ingredients
- 2 smoked sausages
- 2 onions
- 2 garlic cloves
- 800 g tomato pulp
- 1 or 2 centimeters fresh ginger
- 1/2 teaspoon powdered or fresh turmeric
- 1 teaspoon sweet pepper or paprika
- 1 tablespoon peanut butter (optional)
- Flat-leaf parsley or Cilandro washed and chopped
- Olive oil
- Salt and black pepper
Instructions
- Cook the sausages without pricking them in simmering water for 15 minutes.
- Peel and slice the onions, then chop the garlic cloves.In a sauté pan, heat a drizzle of oil and brown the onions for 5 minutes over low heat.Then add the garlic, ginger, turmeric and chilli and continue cooking for 5 minutes, still over low heat.
- Add the crushed tomatoes and the sliced sausages, salt and pepper then mix.
- Then let it simmer for 20 minutes at a low boil without covering.At the end of cooking, you can add a tablespoon of peanut butter and mix well.
- Serve with rice or baked polenta fries, it's a treat.Add finely chopped flat-leaf parsley or cilandro.
