March is a time of transition in the kitchen. Winter vegetables are starting to disappear from the shelves, while spring vegetables are still slow to appear. So, what to cook and eat in March? It’s a bit of a transition month, but don’t worry, it won’t last long and there’s always something to enjoy!

As for fruit, March marks the end of the citrus season. We enjoy the last blood oranges, especially lemons and grapefruits, rich in vitamins and perfect for adding a touch of pep to our dishes and desserts. Apples and pears, faithful allies of winter, are still very present and allow us to make delicious compotes or gourmet tarts, like my latest recipe for a thin caramelized apple pie.
As for vegetables, we still find some roots like carrots, turnips and beets, ideal for comfort dishes. Leeks and cabbages are still a bit in the game, as are spinach and endives. But what is nice in March is the arrival of the first green shoots! Wild garlic is starting to appear, perfect for making homemade pesto. Young spinach and salad shoots bring a little freshness to our plates, and the first asparagus tips appear at the end of the month.
