In summer, I’m a fan of this Avocado and Herb Green Salsa because it’s the kind of recipe that’s easy to make, full of freshness and can be used in many other recipes: on aperitif toast, in a burger, with pasta, as a dip….
All you need is an avocado base, all the herbs you can get your hands on, a squeeze of lemon, a blender and you’re ready to go!
For the realization, I was inspired by one of my favorite books, Simple from Ottolenghi! It’s a book full of easy and quick ideas to prepare, especially during the summer season. I love this book.

Avocado and Herb Green Salsa Recipe
WHAT INGREDIENTS DO YOU NEED TO MAKE THIS AVOCADO RECIPE?
- avocados
- an organic lime (juice and zest)
- a bunch of washed and dried flat-leaf parsley
- washed and dried mint leaves
- a clove of garlic, peeled and degermed
- one shallot, peeled and chopped (optional)
- salt and freshly ground pepper

Avocado and Herb Green Salsa recipe
Equipment
- 1 Blender
Ingredients
- 2 or 3 peeled avocados (approx. 250 g)
- 1 organic lime (juice and zest)
- 1/2 bunch flat-leaf parsley washed and dried
- 5 mint leaves washed and dried
- 1 garlic clove peeled and degermed
- 1 shallot peeled and chopped (optional)
- salt and freshly ground pepper
Instructions
- Place all ingredients in a small food processor.
- Blend until smooth and homogeneous.
- Pour into a jar and serve on toasted bread as an aperitif, or as a sauce on a burger, for example.
