Oysters with Mignonette Sauce recipe are a real tradition in my family…
I don’t know if you’re like me but there are certain products that are truly synonymous with the end of year holidays and oysters are at the top of my list!
I have already tested several recipes such as oysters au gratin and each year I like to revisit my great classics by modifying my recipes a little.
This time, I chose to stay a little more traditional and I started with the timeless shallot vinegar that I twisted a little by adding citrus zest. The result is truly delicious, without distorting the taste of the oyster.
In terms of oysters, I used a ‘Made in France’ variety grown in the bay of Mont Saint-Michel.
They were delicious with a slightly iodized taste and the little extras (not insignificant for me), very easy to open and delivered directly to the house! I really invite you to try it, you will not be disappointed! And don’t forget to serve them with a small glass of dry white wine, of course.
As for the vinegar, I chose to use honey vinegar, the result was really sweet and delicious. In short, I explain all this to you in my recipe which you will find a little further down… Enjoy your visit and enjoy reading!
You will see that this recipe is very easy to make. The longest part is opening the oysters but with this variety and a good knife (remember to bring it), it will be very quick!

Oysters with Mignonette Sauce Recipe
Equipment
- Oyster knife
Ingredients
- 12 oysters
- 20 cl honey vinegar (Melfort type)
- 1 large shallot finely chopped
- 1 little organic orange zest
- 1 little organic lemon zest
Instructions
- Start by opening the desired number of oysters per person, place them on a tray and set aside in a cool place, covered with a large clean cloth.
- In a bowl, mix the honey vinegar, finely chopped shallot and orange and lemon zest (adjust to taste).
- Let stand until ready to serve and enjoy.
