In my last cottage cheese sauce recipe, I told you about this famous Fresh Herb Chicken Meatballs recipe so here it is finally!
I say “famous” because it’s the kind of recipe that I’ve already made a dozen times since I tested it a few weeks ago. It’s one of those dishes that becomes a real family ritual…
What I like about these chicken meatballs is that they are very easy and quick to prepare, they are a balanced dish, they are full of flavor and freshness with the herbs that make them up, and they have been extensively tested and approved on numerous occasions. and by a certain number of people… 😉 including my children who are not big fans of fresh herbs…
The principle of these meat croquettes consists of mixing chicken cut into small pieces with fresh herbs, a shallot and a little parmesan. I then form balls which I roll successively in flour, beaten egg, then breadcrumbs.
No need for frying, personally, I just brown them in a hot pan with oil, and I crush them a little with the back of a wooden spoon when cooking, that’s what gives them this flattened side. It’s a real treat !

What ingredients do you need to make this recipe?
- chicken breasts
- a finely chopped shallot
- pressed garlic clove
- some fresh herbs of your choice: chives, flat-leaf parsley, dill, mint
- freshly grated parmesan or pecorino
- a squeeze of lemon juice
- a beaten egg
- flour
- breadcrumbs
- salt and pepper

Ingredients
FOR THE STUFFING
- 400 g of chicken breast
- 1 finely chopped shallot
- 1 clove of pressed garlic
- Some fresh herbs (chives, flat-leaf parsley, dill, mint)
- 1 tablespoon of flour
- 1 tablespoon freshly grated parmesan or pecorino
- 1 squeeze of lemon juice
- Salt and pepper
FOR BREADING
- 1 beaten egg
- 4 tablespoons of flour
- 4 tablespoons of breadcrumbs
- 1 tablespoon freshly grated parmesan or pecorino
Instructions
FOR THE STUFFING
- In the bowl of a blender, place all the stuffing ingredients, except the flour, parmesan and lemon juice.
- Mix until everything is in small pieces (but not too much either).
- Transfer to a salad bowl, add the lemon juice (the equivalent of a tablespoon), the flour and the grated parmesan. Mix with a fork until well combined.
- Using your hands, form 16 chicken meatballs and place them in a dish.
FOR BREADING
- In 3 different bowls, pour the flour, beaten egg and breadcrumbs as well as the grated parmesan.
- Dip each meatball successively in flour, beaten egg then breadcrumbs. Arrange on a dish.
- Heat a good splash of oil in a pan then place the meatballs in it. Brown all sides for about 10-15 minutes until nicely browned.
- Serve hot as a main course or warm as a starter or appetizer.
