Pumpkin Soup Recipe with Cardamom and Curry
Ingredients
- 1 kg pumpkin
- 1 carrot
- 1 onion
- 1 or 2 garlic cloves
- 1 chicken stock cube
- 2 teaspoons curry powder
- 2 cardamom seeds
- 1 liter water
- 2 tablespoons cream to taste
- Salt and pepper
Instructions
- After washing it and removing the seeds, cut the pumpkin into pieces. There is no need to peel it.
- Put the pumpkin pieces in a saucepan of water, with the carrot, onion and diced garlic. Add the broth, curry and crushed cardamom.
- Leave to simmer at medium temperature for around twenty minutes.
- Salt, pepper and mix everything.
- Serve hot. You can also add a little crème fraîche according to your taste.
