April truly marks the beginning of spring, and we’re starting to see a breath of fresh air on the market stalls. The days are getting longer, the temperatures are still fluctuating, but we can definitely feel that winter is behind us. And frankly, it feels good! So, what to cook and eat in April?
In April, we don’t take off our clothes… Okay, I’ve already taken off my down jacket. Well, I’m saying it now, but with the unpredictable weather, I might be pulling out my neon pink raincoat any day now. 😉 On the other hand, when it comes to cooking, it’s clear: vegetables and fruits are starting to reappear, and we finally have something other than squash and leeks to eat!

So, what are we eating in April? Towards the end of the month, we’ll see the first strawberries arrive, and they’re always a joy. Rhubarb is also making an appearance, perfect for compotes, tangy tarts, or even jams. Apples and kiwis are still around…
As for vegetables, asparagus season is here! White or green, they’re delicious with a simple vinaigrette or in an omelet, but have you ever tried them roasted?! Spinach and chard are making a comeback, perfect for quiches, stir-fries, or gratins. Radishes add crunch and freshness to salads…
April also marks the return of fresh herbs. Wild garlic, for example, is a spring staple: blended with a little olive oil and walnuts, it makes an incredible pesto. Chives and dill delicately flavor dishes, and sage pairs wonderfully with meats and stews.
In short, with all this, we have plenty to enjoy and leave winter behind for good. So, grab your baskets and head to the market to savor the flavors of spring!
